These homemade Matcha Marshmallows are soft, fluffy, lightly sweet, and surprisingly simple to make. They combine gelatin, honey, maple syrup, and matcha for a homemade twist on the classic marshmallow - with no corn syrup or artificial colors.
The matcha gives them their beautiful natural green color and an earthy flavor that balances the sweetness of the honey. Eat them on their own, add them to a warm drink, or make a batch to share.
And while homemade marshmallows might sound intimidating, most of the work is simply letting your mixer do its thing!
Matcha Marshmallow Recipe
Gelatin Mixture

2 scoops gelatin (about 2 Tbsp.)

½ cup cold water
Sugar Syrup

1½ cups water
-
1 cup honey

¼ cup maple syrup (optional, for a softer texture)

1 tsp. vanilla extract

1 pinch Wild + Well-Fed Sea Salt
Matcha

2–3 Tbsp. Wild + Well-Fed Matcha

How to Make Matcha Marshmallows

Pour the ½ cup cold water into the bowl of a stand mixer.

Sprinkle the gelatin evenly over the water and allow it to sit for 5–10 minutes, until fully bloomed.

In a saucepan, combine 1½ cups water, honey, maple syrup, and salt.

Bring the mixture to a gentle boil and simmer for 8–10 minutes, stirring occasionally. Remove from heat.

Whisk the matcha powder into the hot syrup until completely smooth with no lumps. Stir in the vanilla.

Using the whisk attachment, turn the mixer containing the bloomed gelatin to low. Slowly pour the hot matcha syrup into the gelatin. Gradually increase the mixer speed to high and whip for 8–12 minutes, until the mixture becomes thick and glossy and approximately triples in volume.

Pour the marshmallow mixture into an 8 × 8-inch baking dish lined with parchment paper. Allow it to set at room temperature for 1–2 hours, then refrigerate for an additional 2–3 hours.

Dust the top with additional matcha powder, remove from the pan, and cut into squares.
